Ten Nebula & Vegetarianism

I love being a vegetarian.
It feels right to me.
I have been a ovo-lacto vegetarian since 1999.
It started for me when I was becoming more focused on my spiritual path.
I was volunteering and attending events at more health-based spaces.
I ate meat for years but my body was changing and it wanted something different.
One day, I woke up and my body was just like "I don't want meat anymore"
and I followed my truth.
It was not hard for me.
I still eat animal protein which comes in many forms like cake, breads, etc.
Not eating meat makes me feel lighter and more clear.

So that is my story.....

I hope you all enjoy the site!!!!!!

What are the main types of vegetarians?

a. Ovo-vegetarian diet = includes eggs but not dairy products,

b. Lacto-vegetarian diet = includes dairy products but not eggs

c. Ovo-lacto vegetarian diet = includes both eggs and dairy products.

d. Vegan = or strict vegetarian, diet excludes all animal products, including eggs, dairy, and honey.

What are some benefits of becoming a vegetarian?

(1) The consumption of a generous supply of whole grains, legumes, nuts, fruits and vegetables provides protection against chronic diseases such as cancer, cardiovascular disease and diabetes. A plant-based diet is rich in its content of health-promoting factors such as the many phytochemicals.

(Info from vegetarian-nutrition.info)

Who can be a vegetarian?

Well-balanced vegetarian diets are appropriate for all stages of the life cycle, including
- children
- adolescents
- pregnant and lactating women
- the elderly
- competitive athletes

(info from pubmed.gov)

Staples of a Vegetarian Diet

A balanced vegetarian diet should include:
  • Grains and cereals: Wholegrain bread, brown rice, wholewheat pasta, muesli.
  • Legumes, nuts and seeds: Soya beans. kidney beans, split peas, lentils, almonds, cashews, sesame seeds
  • Fruit and vegetables: As much as you want - think variety. Try new fruits and vegetables and include them in your diet every day
  • Dairy or soya products: Look out for fat free and reduced calorie options for milk, yoghurts, cheeses.

What is the healthiest way to become a vegetarian?

The ADA suggests the following tips for following a vegetarian diet:
  • Choose whole-grain products (e.g. whole wheat bread, brown rice, or whole-grain cereals instead of refined or white grains.
  • Eat a wide variety of foods.
  • If you eat dairy products, choose non-fat or low-fat varieties.
  • Use eggs in moderation.
  • Limit intake of sweets and high fat foods.
  • Use a regular source of vitamin B-12, and if sunlight exposure is limited, of vitamin D..
  • Many vegetarian foods can be found in any grocery store. Specialty food stores may carry some of the more uncommon items, as well as many vegetarian convenience foods.

(info from brown.edu)

Why do people become vegetarian?

Among the many reasons for being a vegetarian are health, ecological, and religious concerns, dislike of meat, compassion for animals, belief in non-violence, and economics.

People often become vegetarian for one reason, be it health, religion, or animal rights, and later adopt some of the other reasons as well.

(Info from vrg.org)

How do I become a vegetarian?

There are several ways to make the change. Do whatever feels more comfortable for you. Like other types of cooking, vegetarianism can be simple or complicated, expensive or inexpensive, and use foods that can only be bought in a natural foods store or your local supermarket.

There are a lot of common recipes that are easily made veggie/vegan, or already are - spaghetti and other pasta dishes, burritos, tacos, tostadas, mashed potatoes, three bean salad, pancakes, French toast, waffles, grilled cheese sandwiches, hummus, grilled veggies, oven-roasted veggies, rice, etc. The other way would be to start exploring other cuisines or methods of cooking (go for Thai, Indian, Chinese, etc.) that exclude meat in the dishes to begin with. Some people like to try both approaches.

You could also try making the dishes you usually do and just substitute tofu, seitan or other meat substitutes for the meat in the dishes. (Most supermarkets carry tofu and often other meat substitutes in the produce section. Check the frozen section, near the breakfast foods, for veggie burgers, veggie crumbles, links, and patties.)

(info from vrg.org)

Vegetables

Red - help memory function, urinary tract health, and makes your heart healthy. They also often very high in vitamin C, which helps encourage cellular renewal in your body.

Orange -  give us the right amount of potassium and vitamin A, which keeps our eyes and skin healthy, and protects against infections. They are also known to boost the immune system because of the vitamin C content in many of them.

Yellow - are high in antioxidants like vitamin C. Vitamin C keeps our teeth and gums healthy, helps to heal cuts, improves the mucus membranes (like when we have colds), helps to absorb iron, prevents inflammation, improves circulation, and therefore prevents heart disease.

Greenish/White -  create an anti-bacterial, anti-fungal, and anti-viral chemical environment in your body. Some white foods prevent cancer and heart disease, and lower cholesterol levels.

Blue /Indigo - anti-aging properties, tons of antioxidants, improve circulation, prevent blood clots, help prevent heart disease, help memory function and urinary tract health and to reduce free radical damage

Soy Products

You may have heard about soy foods in the news, including claims that soy prevents diseases such as cancer and heart disease. So what's the story on soy?

Soy, a versatile bean, is found in foods like soy milk, soy sauce, miso (soybean paste), tempeh (which is kind of like a soy cake), and tofu. Soy is also sometimes added to foods like breads, cereals, and meat products, and used as a meat substitute in vegetarian products such as soy burgers and soy hot dogs.

Foods that contain whole soy are a good source of protein for vegetarians and vegans because they provide all the amino acids — a type of nutrient — that people need to stay healthy. (People who eat meat get all their essential amino acids from animal products.)

(info from kidshealth.org)

Greens

These foods have the phytochemicals sulforaphane and indoles, which both prevent cancer. They are also good for the circulatory system and have good vitamin B and minerals.
On this list of fruits and vegetables, the vitamin K in green foods also helps with vision, and with maintaining strong bones and teeth. Some of the yellower green vegetables have carotenoids lutein and zeaxanthin that help to prevent cataracts and eye disease, as well as osteoporosis.

Grains

Ex: Barley, Buckwheat,  bulgur, corn, Millet, Oats, Quinoa, Brown rice, Rye, Wheat, Wild rice

Studies show that eating whole grains instead of refined grains lowers the risk of many chronic diseases. While benefits are most pronounced for those consuming at least 3 servings daily, some studies show reduced risks from as little as one serving daily. The message: every whole grain in your diet helps!

The main benefits of whole grains

The benefits of whole grains most documented by repeated studies include:
  • stroke risk reduced 30-36%
  • type 2 diabetes risk reduced 21-30%
  • heart disease risk reduced 25-28%
  • better weight maintenance
Other benefits indicated by recent studies include:
  • reduced risk of asthma
  • healthier carotid arteries
  • reduction of inflammatory disease risk
  • lower risk of colorectal cancer
  • healthier blood pressure levels
  • less gum disease and tooth loss

(info from wholegrainscouncil.org)

Juices

Juicing probably is not any healthier than eating whole fruits and vegetables. Juicing extracts the juice from fresh fruits or vegetables. The resulting liquid contains most of the vitamins, minerals and plant chemicals (phytonutrients) found in the whole fruit. However, whole fruits and vegetables also have healthy fiber, which is lost during most juicing.

Proponents say that juicing is better for you than is eating whole fruits and vegetables because your body can absorb the nutrients better and it gives your digestive system a rest from working on fiber. They say that juicing can reduce your risk of cancer, boost your immune system, help you remove toxins from your body, aid digestion, and help you lose weight.

But there's no sound scientific evidence that extracted juices are healthier than the juice you get by eating the fruit or vegetable itself. On the other hand, if you don't enjoy eating fresh fruits and vegetables, juicing may be a fun way to add them to your diet or to try fruits and vegetables you normally wouldn't eat. You can find many juicing recipes online or mix up your own combinations of fruits and vegetables to suit your taste.

If you do try juicing, make only as much juice as you can drink at one time because fresh squeezed juice can quickly develop harmful bacteria. And when juicing, try to keep some of the pulp. Not only does it have healthy fiber, but it can help fill you up. If you buy commercially produced fresh juice from a juicing stand or store, select a pasteurized product. Note that juices from some fruits and vegetables can contain more sugar than you might realize, and this can add unwanted calories and lead to weight gain.

(info from mayoclinic.com)

Vegetable Protein

Except soy, all vegetable proteins lack one or more essential amino acids and are called incomplete proteins. Your body pieces together the amino acids to form complete proteins, and so whether you consume all of your amino acids from one source or many types of foods doesn't affect your body's ability to build and use the proteins supplied by vegetable sources.

* Soy (Soybeans, Tempeh)
* Nuts
* Seeds
* Whole Grains
* Legumes (beans, peas and lentils)

(Info from livestrong.com)

*Chlorella - boost the immune system and help fight infection, increase the good bacteria, used to treat constipation, fibromyalgia, high blood pressure and high cholesterol, help protect the body from the effects of cancer radiation treatment

*Blue Green Algae - High protein, energy booster, Anti-aging, anti-oxidants,Immune system strengthener, Improves digestion, Powerful detox

*Kelp - a form of seaweed, iodine, calcium, iron and potassium, and vitamins B1, B2, and B12, reduce cholesterol, prevent infection

Healthy, Whole Foods Are Medicine

What are some options for a tasty vegetarian meal?

Becoming a vegetarian can be as easy as you choose to make it. Whether you enjoy preparing elaborate meals or choose quick and easy ones, vegetarian meals can be very satisfying. In order to make meal preparation easier, the ADA suggests having the following foods on hand:

  • Ready-to-eat, whole-grain breakfast cereals, and quick-cooking whole-grain cereals such as oatmeal
  • Whole-grain breads and crackers, such as rye, whole wheat, and mixed grain
  • Other grains such as barley and bulgur wheat
  • Canned beans, such as pinto, black beans, and garbanzo beans
  • Plant-based proteins like tofu, tempeh, and seitan
  • Milk, yogurt, and fortified soy substitutes
  • Rice (including brown, wild, etc.)
  • Pasta (now available in whole wheat, spinach, and other flavors) with tomato sauce and canned beans and/or chopped veggies
  • Corn or flour tortillas
